I think it’s because, to me, the experience of “sandwich” is defined by a certain special ratio of bread to filling and how it feels in the mouth

and because the experience of a small pointed corner of bread delivering the fillings to your mouth more perfectly encapsulates this ideal than the experience of biting into two big dry flat slabs of bread with fillings hidden between them
